Colombia Finca El Jardin

We’ve been enjoying a lot of great Chirosos from Colombia this year. This one is from Finca El Jardin and is washed, but tastes so much like a natural, it’s astounding. Opening the bag, it smells like a natural. It’s incredibly sweet with light purple and red fruits, but cools with a little more brightness and yellow fruits. Most Chirosos we’ve tasted tend to have a stickier sweetness like raisins or figs with some vanilla or marshmallow flavor, or even milk duds, but the selections we are offering break that mold just a bit. This one has potential as an everyday drinker, but is pretty interesting and exaggerated for the Chiroso space.

This coffee was roasted very lightly by Substance Café in Paris, and rested appropriately about 8 weeks before freezing. This coffee continues to open up as it ages, which is why we’ve intentionally aged them to near-peak before freezing. Coffees are thawed to order.
